Graduation is always a busy time for Market Hall Caterers, but this year we enjoyed a special challenge - a commencement reception for 1500 guests with a totally vegan menu.
We offered a varied menu including Grilled Eggplant Focaccia Sandwiches with Picante Red Pepper Sauce, Baby Roasted Potatoes stuffed with Vegetable Tapenade, and Aram Pinwheels with Cucumbers and Hummus. But the big hit of the day were the desserts: Brownies, Chocolate dipped Shortbreads, Oatmeal Raisin and Banana Walnut Cookies – and the biggest crowd pleaser, the Magical Coconut Cookie Bars.
We doubt if the guests even noticed that everything was vegan; they definitely did not go lacking. Myisha Chapple, one of our event coordinators on site, enjoyed telling the graduates and their family that all of the desserts were vegan. She was delighted to hear, “no way!” or “you’re kidding me!” after they tried a bite. She said WOW! was the word of the day.
