Our Cheese Selection
We understand that the produce customer is health conscious and looking for fresh, local ingredients. With that in mind, we base our cheese selection on the following criteria: raw milk, sustainable, organic and local; more than half of our cheeses are carefully chosen from farms within 100 miles of Market Hall. Our cheese selection is also focused on a wide variety of styles, from fresh goat cheeses to crumbly blue cheeses cow, goat, sheep - we have it all. Moreover, everything is packaged and convenient, pre-cut at the dairy, ready to grab and go.
This local, farmstead cheese is raw, creamy, crumbly and sharp.
Uses: Crumble over warm ginger snap cookies and grilled peaches for the perfect summer dessert.
Fresh Mozzarella and Ricotta
Our cheese buyer says these are the "best in the country for cooking."
Uses for Mozzarella: Melt on pizza or grill in a perfect Panini Margherita with tomatoes and basil
Uses for Ricotta: Spread over toasted walnut levain bread - drizzle with olive oil and salt and pepper OR, on the sweeter side, top with honey and fresh thyme leaves
Garlic & Chive and Three Peppercorn Chevre
- Make crepes with smoked salmon and herbed goat cheese, roll up and cut into pinwheels
- Cut Peruvian cucumber into coins, top with pepper chevre and smoked trout
- Prepare pasta primavera with goat cheese as the pasta sauce: cook pasta, drain, return to hot pan, dollop in fresh goat cheese and stir gently. Then toss in your favorite grilled veggies.
