We've also invited Greg Dunmore, co-founder of Japanese Pantry, to showcase a collection of high-quality Japanese ingredients that are perfect for making the recipes in this book.

About the Book
Rintaro has been a destination restaurant in San Francisco since it opened in the Mission District in 2015 by chef Sylvan Mishima Brackett. Formerly a chef at Chez Panisse, Sylvan is known for his impeccable take on Japanese cuisine that's heavily influenced by his California upbringing. Rintaro: Japanese Food from an Izakaya in California features more than 70 recipes for rice, simmered dishes, homemade udon, grilled foods and more.
About the Author
Sylvan Mishima Brackett is the chef-owner of Rintaro in San Francisco. Sylvan was born in Kyoto, Japan, and raised in Northern California. He is the former creative director at Chez Panisse, and trained at Soba Ro in Saitama, and at a Ryotei in Aoyama, Tokyo.
